Cooking with Chickens!: Super good, gluten-free, lactose-free peanut butter cookies!

1. MIX together:
1 cup peanut butter (smooth or cunchy),
1/2 cup sugar
1 egg


2. ROLL into balls and flatten with fork on ungreased baking sheet.

3. BAKE at 325°F for 20 minutes. Cool on a wire rack before placing in large "Pollio" tupperware container.

Alternate Recipe:
1. Get peanut butter
2. Make peanut butter cookies

DISCLAIMER (From Denise): These are the best cookies ever, and very addictive, and sometimes if you are like me they make you very hyper (I cleaned my desk today after just 4 cookies!!)

They are better for you than other recipes because they don't have a lot of junk in them but they are more expensive to make because you use a lot of PB. On the plus side though is that those of us who live in shoe boxes with few possessions actually have all the ingredients on hand.

No. That's crazy talk. I don't even know what kind of anarchy would ensue if you tried something like that!

All kinding aside though, the sugar binds and gives texture (not just sweetness) you could probably use brown sugar instead of white if you wanted to. If you want to use less sugar than you should switch to a recipe with more dry ingredients (binders like flour) and less peanut butter

p.s. But then it isn't gluten-free which was the whole point in the first place.
